Dinner Party
Last month to celebrate Michael's new job, Matt's acceptance to grad school, and to simply catch up, Eben, Rusmir, Matt, Michael and I gathered at our place to have a potluck dinner.
It was the perfect opportunity to debut my new mixer! I've been wanting to make a tart for a few years now, but was skeptical of my abilities with my old handheld mixer. I even got a fabulous new tart pan for Christmas this past year which I had yet to use.
I decided on a lime curd tart. While the shell baked, I zested the limes (and a little bit of my thumb).
After two rounds of baking; once with foil and rice in the middle, then followed by browning, the tart shell cooled and looked great! The recipe was for a pan with a 1" larger diameter, so it was a bit thick even though I didn't use all the dough.
Once shell was cool, I poured in the fresh lime curd and allowed it to cool once more. I added the raspberries later. I only did one half to give everyone the option of with or without fruit.
Matt and Rusmir waited on Michael's couch while we set the table for dinner.
We at in Michael's apartment since his table is much larger and my kitchen was a bit of a disaster. Dinner was very yummy! We had chicken bite appetizers (Michael), suddenly pasta salad (Rusmir), roasted chicken (Matt), panzanella (Eben), and a lime curd tart (me). My tart got rave reviews which is always nice when making something for the first time!

Hey. It's rare that I hit "Next" and come upon a page that is even in English anymore. Much less of this calibre. How out there are you? I have a hunch you could relate to me. I just started a kangaroo rodeo.
